Rice Salad

Usually, we have a misconception that Salads are only served as side dish along with the main course, but the rice salad recipes prove it wrong as it can be a complete meal which includes a mixture of meat (protein), varied fruits, nuts and vegetables and that enriches a simple rice salad dish together making it a unique salad recipe.

It is called as a salad as the vegetables and fruits are mixed in its raw form, not cooked. Who else won’t wish to cook an easy recipe which itself is nutritious and delicious, tangy and a time saver dish too.


  • I cup of long grained rice
  • 1 kg boneless chicken pieces
  • 1/2 cup sliced onion,
  • 1 cup green grapes
  • 1 cup sliced oranges
  • I cup chopped tomatoes
  • 1 cup chopped bell pepper
  • 2 tablespoons lemon juice
  • 1/2 cup chopped walnuts,
  • 1 cup sliced fresh strawberries
  • 1 cup diced celery
  • 2 big lettuce head – rinsed, dried and torn
  • 1/4 teaspoon ginger powder
  • 1 teaspoon mustard sauce
  • 1 cup mayonnaise salad dressing
  • 2 tablespoons sesame seeds
  • 1 tablespoon white sugar
  • 1/4 teaspoon ground white pepper
  • 1 teaspoon salt
  • 50 g butter
  • 2 cup of water

Cooking time: 20 minutes.


Take a medium sized sauce pan. Put the rice in to the saucepan and bring it boil. Don’t over boil it as it may turn sticky which is not desirable for this salad dish.Drain the rice thoroughly in a colander and allow it to cool.

Meanwhile we can cook chicken as one of the major ingredients for rice salad. For that, heat oil in the pan over medium flame. Put the butter till it melts completely. Add the chicken pieces. Add pinch of salt for taste. Add ginger powder and stir fry for 5 minutes till the chicken gets slightly brown colour.keep it aside.

Take another pan. Now dry roast the almonds, nuts and sesame seeds. Take a large mixing bowl .Mix together the cooled rice, red pepper, green pepper, red onion, lettuce, celery, mushrooms, strawberries, tomatoes, coriander and parsley, grapes, and oranges. Now add the walnuts, sesame seeds and the fried chicken. Add the mustard and mayonnaise sauce. Toss nicely, so that all the salad ingredients get well coated with the sauce. Set aside.

To make dressing put lemon juice and in a small bowl. Dissolve sugar and salt .Add dressing to salad and cover it completely. Cover and cool it for 1-2 hours. Serve the chilled rice salad in your breakfast or lunch.
