The main ingredients required for preparing a Paella recipe are saffron, rice and olive oil but there is no single way to prepare paella. You can make a meaty Paella recipe by adding shrimps, squid, clams or any other seafood that you like or even chicken or simply prepare a vegetarian Paella.
This is one of the simplest Paella recipes in which we are going to use chicken and seafood.
- 1 chicken, cut in pieces
- ½ cup olive oil
- 6 chopped cloves garlic
- 1 teaspoon paprika
- 1 chopped onion
- ½ cup chopped fresh parsley
- 4 chopped roasted red peppers
- ½ teaspoon saffron
- ½ cup chicken stock
- 2 cup rice
- 1 lb fresh shrimp with shell
- 1 lb cleaned squid cut in rings
- 16 to 18 mussels
- 1 cup frozen peas
- Lemon wedges
Start with heating the chicken broth and saffron and keep it aside for later use.
In a paella pan heat olive oil and sauté chicken till it is brown and cooked, add salt and paprika to it and add few onion slices to avoid spattering, now add ½ of the garlic.
When garlic turns light brown, remove chicken and add shrimps to it, cook it until orange take out shrimps and keep it aside. Now add the remaining onion, parsley, garlic and red pepper and sauté until soft.
Add rice, stir to glaze with oil. Add broth, little at a time bringing it to boil after each addition. Add salt to taste.
Arrange chicken on top.
Add scrubbed mussels and arrange shrimps and squid on top.
Scatter peas last on the top. Cover loosely with foil and continue cooking until all the liquid has been absorbed, rice is fluffy and mussels have opened.
The juice of the lemon is sprinkled on the rice at the time of serving.
