This is an easy recipe to follow and creates fab and healthy banana muffins every time.
This is ideal for lunchboxes and you could also use it as the base of a banoffee pie. Banana was originally used in lieu of butter when none was available to moisten the muffin, but has since developed into this yummy version.
Make sure the bananas are ripe and moist as green, unripe bananas will just not work. If you like a dryer, crumblier muffin, then use 3 bananas or if you prefer it very moist then try 4 or 5.

Cooking time: 20 minutes
- 3 or 4 large bananas; peeled and mashed.
- 100g white sugar
- 1 beaten egg
- 75g melted butter
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ tsp. salt
- 185g all-purpose white flour
Method of Preparation:
Mash the bananas with a fork until they are almost pureed.
Whisk the egg and the sugar together with a whisk until fluffy, but you are not looking for peaks in the eggs or anything. To this, whisk in the butter until you have a smooth mixture.
Add the bananas into this wet mixture and mix so the banana is thoroughly combined and not in chunks.
Set this mixture to one side.
In another bowl, sift the flour. To the flour, sift in the baking soda, baking powder, and salt. It is important you use both baking powder and baking salt – they are NOT the same thing!
Make sure this mixture has no lumps on whatsoever.
Combine the west mixture with the dry mixture and mix with a wooden spoon until just combined. Make sure it is not overworked as the gluten in the flour will stretch and this makes for heavy muffins!
Grease a muffin tin with butter and/or muffin cases. Heat the oven to 180C.
Once greased, pour the mixture into the cases. This makes for about twelve muffins.
Once cooked, a nice way to serve is with a chocolate sauce, simply made with 100g milk chocolate and 40ml of milk. Warm the two together until both are melted and fully combined. Make a hole in the top of the muffin and pour the sauce in the hole and then over the top so the flavour of the chocolate goes all the way through.
You could also serve sliced in half with peanut butter spread on both sides for a nutritious breakfast
