Heat up remaining oil, add the black cumin seeds (kalonji) and now add the whole dry red chillies and bay leaf, stir fry for a few minutes till seeds crackles. Now add the chopped onions and salt. Fry it for few minutes till it is turns golden brown. Sprinkle little water, if required. Add ginger and mustard paste and then stir for couple of minutes.

Fry it well to remove the pungency from the mustard. At this stage add the fried potatoes along with coriander and turmeric powder. Stir fry masala nicely until oil starts separating. Pour 3- 4 cups of water. Now cover the lid of the pan. Cook it in simmer for 5 minutes so that potatoes are completely cooked. I’m so worried about the direction our children are heading in nowadays. Watching Jamie Olivers food revolution tv program scared the thingies out of me. I suggest we all start cooking some healthy recipes like these at home if we’re going to fix this horrible situation. The ones on that site seem pretty easy, I tried last night and it’s the first time my family has eaten healthy in so long, I just feel wonderful.
