This Pizza recipe is really easy but takes quite a long time to make. This also includes making the dough from scratch which is something that is real fun and makes you feel like a proper Italian waiter!
Try dried Italian herbs such as oregano, thyme, parsley, or simply onion or garlic powder.
The best way olive oil to use is proper extra virgin olive oil as any Italian will tell you, as there is a buttery, herby, peppery flavour that you cannot get from anything else. If you want to add an extra bit of kick, try a little bit of dried chilli in with the herbs for more of a kick.
- 200g of plain flour
- 100ml lukewarm milk
- ½ small sachet yeast
- 1 tsp. sugar
- Pinch of salt
- 3 tbsp. olive oil
- Pinches of herbs
- Tin of tomatoes
- Couple of onions
- 150g mushrooms
- Tin of sweet-corn
- 200g grated cheese
Method of Preparation:
Sift the flour in a bowl.
Mix the sugar, yeast, and milk together in a bowl at 35C and leave to rest for ten minutes.
Put the flour onto a flat surface and make a well in the middle of the flour. Put the milk and yeast into this well.
Stir the milk from the middle and add in some olive oil and some salt and mix it all together. Knead it together WITH YOUR HANDS and when it is smooth, put it in a bowl and cover for thirty minutes.
Add the herbs. Leave it to rest for another hour.
Once it’s been rested, it should have doubled in size.
Let it warm up again on a baking sheet for about half an hour. Divide into small pizza sizes.
Add the topping.
Sautee the onions with some garlic and salt.
Make sure you cook them in olive oil. C
ook slowly until they are translucent and make sure the garlic doesn’t burn.
Add in the tin of tomatoes and a dash of balsamic vinegar if you have some and cook a little longer.
Spread this over the top of the pizza bases.
Next, sauté the mushrooms in a little lemon juice and spread these on the top.
Next, break the sweet-corn and spread this over.
You can add some Parma ham or bacon on top of this.
Cook for around ten to twelve minutes at 220C in a warm oven. Serve with a green salad.
