Serves: 15 (makes about 36 miniature pasties)
- 2 eggs (beaten)
- 2 cups pumpkin
- ¾ cup sugar
- ½ tsp salt
- ½ tsp ginger
- 1 tsp cinnamon
- ¼ tsp cloves
- 1 can milk
- ½ tsp allspice
- 9 oz pie crust pastry
Roast the pumpkin in an oven and then press it through strainer. Bake the pie fillings without crust in a large greased casserole dish in the hot oven for 15 minutes at 425 F. Keep the door of the oven closed and reduce the temperature to moderate down and continue baking for another 45 minutes. Check if the pie has been well baked by inserting a knife in the center of the dish. If it comes out clean consider it as baked. Let it cool down on wire rack.
Make pie crust pastry at home or buy them from market. Roll thin and cut them into circles of approximate 4” in diameter. Now put a spoonful of cool pumpkin mixture towards one side of the center of circle. Fold over the crust into a half circle shape and firmly crimp the closed edges.
Slice three – four small slits in the top to vent. Later place it on a greased cookie sheet and bake it in oven until crust is a light golden brown. The pumpkin filing will make the crust soggy. It can be made ahead of freezing the assembled pasties unbaked on cookie sheets, then thawed and baked the day of serving. Let it cool down at room temperature. Serve it on room temperature.
